Office Pro Plus in shared PC pool environment

We have an academic environment where students use any PC and each day might be a different one. We have Office 365 so I've deployed Office 2013 Pro Plus using the ODT and a configuration file containing the shared licence option. We only have AADconnect to sync account to O365 and no ADFS for sign-on.

With roaming users (not profiles!) we find every time a student uses another PC for the first time they get prompted to activate office. My understanding was in shared licence mode the user shouldn't experience this and the activation shouldn't be deducted from the 5 license allowance.

I know all about ADFS and AADconnect etc so I'm wondering whether ADFS is absolutely essential to authenticate users through to Azure in order for the activation to be seamless and not prompt the user for their email identity each time ?

Was that not the purpose of the Sign-On Assistant for people without ADFS (ie: home users probably) ?

Most of what I've read about shared licensing talks about RDS and where numerous users logon to one machine at the same time - we have a simple but typical bunch of users choosing any machine they want in the classroom each day.

Any advice would be greatly appreciated.
